A cozy yet refined sandwich perfect for autumn afternoons or light lunches. The combination of roasted turkey, crisp apple slices, creamy brie, and a touch of honey mustard or fig jam offers a perfect balance of sweet, savory, and tangy flavors. It’s ideal for using up leftover turkey or making an impressive but simple meal.
2 slices crusty French bread or ciabatta
3 oz roasted turkey breast
4 thin slices Granny Smith apple
2 oz brie cheese, sliced
1 tbsp honey mustard or fig jam
Optional: handful of arugula or spinach
Butter for toasting (optional)
Spread honey mustard or fig jam on one slice of bread.
Layer the turkey slices evenly over the jam.
Add apple slices, then place the brie on top.
Add arugula or spinach if using, then top with the second slice of bread.
For a toasted sandwich, butter the outside of each bread slice and cook in a skillet over medium heat for 3–4 minutes per side until the bread is golden and the brie begins to melt.
Slice in half and serve warm.
Tart apples like Granny Smith offer the best contrast to the creamy brie and rich turkey.
Fig jam brings a more gourmet, slightly earthy sweetness compared to honey mustard.
This sandwich works beautifully with smoked turkey as well.
