A hearty, comforting Tex-Mex classic, this Texas Tamale Pie Casserole brings together seasoned ground beef, melty cheese, and a golden cornbread topping in one irresistible dish. For the Filling:
1 ½ pounds ground beef
1 small onion, finely chopped
2 garlic cloves, minced
1 (10-ounce) can diced tomatoes with green chiles
1 (8-ounce) can tomato sauce
1 cup frozen or canned corn, drained
1 tablespoon chili powder
1 teaspoon ground cumin
½ teaspoon smoked paprika
Salt and pepper to taste
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
For the Cornbread Topping:
1 cup yellow cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
1 tablespoon sugar (optional)
1 cup whole milk or buttermilk
1 large egg
¼ cup unsalted butter, melted
Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
In a large skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess fat.
