A warm, hearty dish perfect for Sunday dinners, chilly evenings, or any time you’re craving a comforting bite of home. Inspired by Southern traditions, this casserole layers beef, rice, corn, tomatoes, and cheese for a deeply satisfying one-pan meal.
1 lb ground beef (80/20 preferred)
1 small yellow onion, finely chopped
2 cloves garlic, minced
Salt and black pepper, to taste
1 tsp smoked paprika
1/2 tsp chili powder (optional)
1 cup long-grain white rice, cooked (about 3 cups cooked)
1/2 tsp salt (for rice)
1 tbsp butter (optional)
1 1/2 cups canned or frozen corn, drained or thawed
1/2 tsp sugar
1 tbsp chopped parsley or green onions (optional)
1 can (14.5 oz) diced tomatoes, drained
1/4 cup tomato sauce
1/2 tsp dried oregano
1/2 tsp garlic powder
1/2 tsp onion powder
2 cups shredded cheddar cheese (or a blend with Monterey Jack)
Optional topping: crushed butter crackers or French-fried onions
Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
In a skillet over medium heat, brown the ground beef. Add chopped onion and garlic and cook until softened. Season with salt, pepper, smoked paprika, and chili powder if using. Drain excess grease.
Prepare rice according to package directions. Stir in butter and a pinch of salt for flavor.
In a small bowl, mix together the diced tomatoes, tomato sauce, oregano, garlic powder, and onion powder.
Begin layering the casserole:
First, spread the cooked rice evenly across the bottom of the dish.
Second, layer the corn over the rice. Sprinkle with sugar and chopped parsley if using.
Third, spread the seasoned beef over the corn layer.
Fourth, spoon the tomato mixture evenly over the beef.
Fifth, sprinkle the shredded cheese over the top. Add cracker crumbs or fried onions if desired.
Cover the casserole with foil and bake for 25 minutes.
Remove foil and bake an additional 10–15 minutes, or until the cheese is melted and bubbly.
Let rest for 10 minutes before serving to allow layers to set.
Substitute brown rice for a healthier option.
Add black beans, bell peppers, or jalapeños for extra flavor or heat.
Use ground turkey or chicken for a leaner version.
Sharp cheddar adds depth, but feel free to blend cheeses.
