One-Pan Cheesy Meat & Potato Skillet

This one-pan cheesy meat & potato skillet is quick to prepare, full of flavor, and perfect for when you want something hearty without a lot of cleanup.   • 1 pound ground beef (or ground turkey)

  • 4 medium russet potatoes, diced into ½-inch cubes

  • 1 small yellow onion, diced

  • 2 cloves garlic, minced

  • 1 tablespoon olive oil

  • 1 cup shredded cheddar cheese

  • ½ cup shredded mozzarella cheese (optional)

  • ½ teaspoon smoked paprika

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • Salt and black pepper, to taste

  • 2 tablespoons fresh parsley, chopped (for garnish)

Optional add-ins:

  • ½ cup diced bell peppers

  • ¼ cup chopped green onions

  • Pinch of red pepper flakes (for heat)

Instructions

  • Dice potatoes, onions, and any optional vegetables. Mince garlic and shred cheeses.

  • In a large oven-safe skillet, heat olive oil over medium heat. Add ground beef and cook for 5-6 minutes, breaking it apart until browned. Season lightly with salt and pepper. Drain excess grease if needed.

  • Add diced onion and garlic to the skillet. Cook for 2-3 minutes until softened and fragrant.

  • Stir in the diced potatoes. Sprinkle with smoked paprika, garlic powder, onion powder, salt, and pepper. Mix well to evenly coat.

  • Spread mixture evenly across the skillet. Cover with a lid or foil and cook over medium heat for 12-15 minutes, stirring occasionally, until potatoes are tender.

  • Reduce heat to low. Sprinkle cheddar and mozzarella over the top. Cover again and let cheese melt for 2-3 minutes. For a crispy top, place under the broiler for 2-4 minutes.

  • Garnish with fresh parsley or green onions before serving. Serve hot.

  • Use Yukon Gold potatoes for a creamier texture.
