14 oz smoked sausage, sliced into 1/2-inch rounds
4 medium russet potatoes, diced
1 medium yellow onion, thinly sliced
2 tbsp olive oil
1 tsp garlic powder
Salt and black pepper to taste
2 tbsp fresh parsley, chopped (optional for garnish)
Heat olive oil in a large skillet over medium heat.
Add the diced potatoes and cook for 10–15 minutes, stirring occasionally, until golden brown and tender.
Add the sliced onions and cook for another 5 minutes, until soft and lightly caramelized.
Stir in the sliced smoked sausage and cook for 5–7 minutes, allowing the sausage to brown on both sides.
Season with garlic powder, salt, and pepper to taste.
Cook everything together for another 2 minutes to let the flavors blend.
