  • 14 oz smoked sausage, sliced into 1/2-inch rounds

  • 4 medium russet potatoes, diced

  • 1 medium yellow onion, thinly sliced

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • Salt and black pepper to taste

  • 2 tbsp fresh parsley, chopped (optional for garnish)

Instructions

  • Heat olive oil in a large skillet over medium heat.

  • Add the diced potatoes and cook for 10–15 minutes, stirring occasionally, until golden brown and tender.

  • Add the sliced onions and cook for another 5 minutes, until soft and lightly caramelized.

  • Stir in the sliced smoked sausage and cook for 5–7 minutes, allowing the sausage to brown on both sides.

  • Season with garlic powder, salt, and pepper to taste.

  • Cook everything together for another 2 minutes to let the flavors blend.

  • Remove from heat, sprinkle with fresh parsley if using, and serve hot.
