Hearty Beef and Potato Bake: A Comforting Classic for Any Night

A warm, hearty meal perfect for weeknight dinners or family gatherings, this beef and potato bake combines savory seasoned ground beef with creamy mashed potatoes and melty cheese. It’s a classic comfort dish that’s simple to make and satisfying to eat.

  • 1 medium onion, chopped

  • 2 garlic cloves, minced

  • 1 pound ground beef

  • 2 tablespoons tomato paste

  • 1 teaspoon Worcestershire sauce

  • 1/2 cup beef broth

  • 1 teaspoon dried thyme

  • 1 teaspoon smoked paprika

  • Salt and pepper to taste

  • Optional: 1 cup frozen peas or corn

For the Potato Topping:

  • 2 pounds russet potatoes, peeled and chopped

  • 1/2 cup milk (more as needed)

  • 3 tablespoons butter

  • 1/2 cup sour cream

  • Salt and pepper to taste

  • 1 cup shredded cheddar cheese

  • Optional: Extra cheese for topping, chopped chives or parsley for garnish

Instructions

  • Preheat oven to 375°F (190°C).

  • Boil potatoes in salted water until fork-tender, about 15-20 minutes. Drain, then mash with butter, milk, sour cream, salt, and pepper. Stir in cheese and set aside.

  • In a large skillet, heat olive oil over medium heat. Sauté onion until soft, about 5 minutes. Add garlic and cook for 1 minute more.

  • Add ground beef and cook until browned. Drain excess fat.

  • Stir in tomato paste, Worcestershire sauce, beef broth, thyme, paprika, salt, and pepper. Simmer for 5-7 minutes until slightly thickened. Add peas or corn if using.

  • Spread the beef mixture evenly into a greased 9×13-inch baking dish.

  • Top with mashed potatoes and spread evenly. Sprinkle additional cheese on top, if desired.

  • Bake for 25-30 minutes until the top is golden and bubbly.

  • Let rest for 5-10 minutes before serving. Garnish with herbs if desired.
