Hearty and Delicious Hamburger Potato Casserole Recipe

  • 1 pound ground beef (lean)

  • 1 medium yellow onion, diced

  • 3 cloves garlic, minced

  • 56 medium russet potatoes, peeled and thinly sliced

  • 1 can (10.5 oz) condensed cream of mushroom soup

  • 1 cup whole milk

  • 1/2 cup sour cream

  • 1 1/2 cups shredded cheddar cheese, divided

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon paprika (optional)

  • 2 tablespoons butter (for greasing and added richness)

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or nonstick spray.

  • In a large skillet, brown the ground beef over medium heat until fully cooked. Add diced onion and garlic, cooking until onions are soft. Season with salt, pepper, and paprika if using. Drain excess grease.

  • Peel and thinly slice potatoes to about 1/8-inch thickness using a mandoline or sharp knife.

  • In a bowl, mix the condensed soup, milk, and sour cream until smooth.

  • Begin layering in the prepared dish:

    • First, add a layer of sliced potatoes

    • Next, a layer of the beef and onion mixture

    • Then a portion of the soup mixture

    • Sprinkle with a bit of shredded cheese

    • Repeat layers until all ingredients are used, finishing with sauce and remaining cheese on top

  • Cover with foil and bake for 60 minutes.

  • Remove foil and bake uncovered for another 20–25 minutes, or until potatoes are tender and top is golden and bubbly.

  • Let rest for 5–10 minutes before serving.

  • Use a mandoline for even potato slices and quicker prep.

  • Sharp cheddar cheese works best, but other cheeses like Colby Jack or mozzarella can be used.

  • Add frozen vegetables like peas or green beans between layers for more nutrition.
