Healthy Ground Beef Cabbage Stir-Fry

A quick, wholesome, and flavorful dish perfect for busy weeknights. This stir-fry blends lean ground beef with tender cabbage and savory Asian-inspired seasonings. It’s low-carb, high-protein, and customizable, making it ideal for meal prep or a simple family dinner.

  • 1 pound lean ground beef (90% lean or higher)

  • 1 small head of green cabbage, thinly sliced

  • 1 medium onion, thinly sliced

  • 2 cloves garlic, minced

  • 1 tablespoon fresh ginger, grated

  • 1 tablespoon sesame oil

  • 2 tablespoons soy sauce (or tamari for gluten-free)

  • 1 tablespoon rice vinegar

  • 1 teaspoon sriracha (optional)

  • Salt and black pepper, to taste

  • Green onions and sesame seeds, for garnish

Instructions

  • In a large skillet over medium-high heat, cook the ground beef, breaking it apart until fully browned. Drain excess fat and set aside.

  • In the same skillet, heat sesame oil. Add the onion, garlic, and ginger. Sauté for 2–3 minutes until fragrant and softened.

  • Add the sliced cabbage. Stir frequently and cook for 5–8 minutes until just tender but still crisp.

  • Return the ground beef to the skillet. Add soy sauce, rice vinegar, and sriracha. Stir to combine and heat through.

  • Season with salt and pepper to taste.

  • Remove from heat and garnish with green onions and sesame seeds. Serve hot.

  • Substitute ground beef with turkey or tofu for variations.

  • Add mushrooms, carrots, or bell peppers for extra veggies.
