A fun, comforting, and flavor-packed dish, Dorito Casserole is the perfect weeknight dinner or potluck crowd-pleaser. With layers of seasoned beef, creamy cheese, and crunchy Doritos, it’s a nostalgic meal that brings a touch of Tex-Mex flair to your table.
1 pound ground beef
1 packet taco seasoning (or 2 tablespoons homemade taco spice)
1 medium onion, diced
1 can (10 oz) Rotel tomatoes with green chilies, undrained
1 can (10 oz) cream of chicken soup
1/2 cup sour cream
2 cups shredded cheddar cheese, divided
1 bag (9.75 oz) Nacho Cheese Doritos, lightly crushed
1 tablespoon olive oil
Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
In a skillet, heat olive oil over medium heat. Add diced onion and cook until soft, about 2–3 minutes.
Add ground beef and cook until browned, about 6–8 minutes. Drain excess grease.
Stir in taco seasoning and Rotel tomatoes. Let simmer for 3–5 minutes.
Remove from heat and mix in cream of chicken soup, sour cream, and 1 cup of shredded cheddar cheese. Add any optional ingredients at this stage.
Spread half of the crushed Doritos in the bottom of the baking dish.
Pour the beef mixture evenly over the Doritos layer.
Top with remaining Doritos and sprinkle the rest of the cheese on top.
Bake uncovered for 20–25 minutes or until cheese is melted and bubbly.
Let rest for 5 minutes before serving.
For extra crunch, reserve a handful of crushed Doritos to sprinkle on after baking.
Make it spicier by adding hot sauce, jalapeños, or extra green chilies.
Swap ground beef for shredded chicken or turkey for a lighter version.
Reheats well for up to 4 days and can be made ahead of time.
