Creamy Blue Cheese Chicken is a decadent and flavorful dish that’s perfect for date nights, dinner parties, or when you’re simply in the mood to indulge in something rich and satisfying. The bold, tangy taste of blue cheese pairs beautifully with tender, pan-seared chicken breasts, creating a gourmet-style meal that’s surprisingly easy to make at home.
4 boneless, skinless chicken breasts
Salt and black pepper, to taste
1 tsp garlic powder
1 tbsp olive oil
2 tbsp butter
3 cloves garlic, minced
½ cup chicken broth
¾ cup heavy cream
½ cup crumbled blue cheese
¼ cup grated Parmesan cheese
1 tsp Dijon mustard
1 tsp lemon juice
Fresh parsley, chopped (for garnish)
Season the chicken breasts with salt, pepper, and garlic powder on both sides.
Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5–6 minutes per side, or until golden and cooked through. Remove chicken from the pan and set aside.
In the same skillet, reduce heat to medium and melt the butter. Add minced garlic and sauté for 30 seconds until fragrant.
Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
Stir in the heavy cream and Dijon mustard, then add the blue cheese and Parmesan. Cook, stirring, until the cheese melts and the sauce becomes smooth and creamy—about 3–4 minutes.
Add lemon juice, then taste and adjust seasoning with additional salt and pepper if needed.
Return the chicken breasts to the skillet and spoon the sauce over them. Simmer for another 2–3 minutes until everything is heated through.
Garnish with chopped parsley and serve immediately.
