There’s nothing easier or more adaptable than cake mix cookie bars. With a handful of pantry staples and just a few minutes of prep, you can create soft, chewy cookie bars that taste like they came from a bakery. This recipe is ideal for parties, potlucks, or an easy weeknight dessert—perfect when you want something sweet without the extra effort.
1 box (15.25 oz) yellow cake mix (or flavor of choice)
1/2 cup unsalted butter, melted
2 large eggs
1 cup semi-sweet chocolate chips
Optional: 1/2 cup chopped walnuts, M&M’s, white chocolate chips, sprinkles, or other mix-ins
Preheat your oven to 350°F (175°C). Grease or line a 9×13-inch baking dish with parchment paper.
In a large mixing bowl, stir together the cake mix, melted butter, and eggs until fully combined. The dough will be thick.
Fold in the chocolate chips and any optional mix-ins.
Press the dough evenly into the prepared baking dish using a spatula or clean hands.
Bake for 20–25 minutes, or until the edges are golden brown and the center is set.
Let the bars cool completely in the pan before cutting into squares.
For thicker bars, use a 9×9-inch pan and add 5–10 minutes to the baking time.
