There’s nothing easier or more adaptable than cake mix cookie bars. With a handful of pantry staples and just a few minutes of prep, you can create soft, chewy cookie bars that taste like they came from a bakery. This recipe is ideal for parties, potlucks, or an easy weeknight dessert—perfect when you want something sweet without the extra effort.

Ingredients

Scale
  • 1 box (15.25 oz) yellow cake mix (or flavor of choice)

  • 1/2 cup unsalted butter, melted

  • 2 large eggs

  • 1 cup semi-sweet chocolate chips

  • Optional: 1/2 cup chopped walnuts, M&M’s, white chocolate chips, sprinkles, or other mix-ins

Instructions

  • Preheat your oven to 350°F (175°C). Grease or line a 9×13-inch baking dish with parchment paper.

  • In a large mixing bowl, stir together the cake mix, melted butter, and eggs until fully combined. The dough will be thick.

  • Fold in the chocolate chips and any optional mix-ins.

  • Press the dough evenly into the prepared baking dish using a spatula or clean hands.

  • Bake for 20–25 minutes, or until the edges are golden brown and the center is set.

  • Let the bars cool completely in the pan before cutting into squares.

Notes

  • For thicker bars, use a 9×9-inch pan and add 5–10 minutes to the baking time.

  • Swap in different cake mix flavors like chocolate, red velvet, or lemon.

  • Store at room temperature in an airtight container for up to 5 days or freeze for up to 3 months.

  • For an extra indulgent touch, serve warm with a scoop of vanilla ice cream.
