It’s low-carb, easy to prepare, and bursting with bright Italian flavors — perfect for weeknights or meal prep.

  • 2 boneless, skinless chicken breasts

  • 1 tbsp olive oil

  • 1 tsp Italian seasoning

  • Salt and pepper to taste

  • 1 cup cherry tomatoes, halved

  • 2 cloves garlic, minced

  • 1 tbsp balsamic vinegar

  • 1/4 tsp salt

  • 1/4 tsp black pepper

  • 1/2 cup shredded mozzarella cheese

  • 2 tbsp grated Parmesan cheese

  • 1/4 cup chopped fresh basil (plus more for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish or line with parchment paper.

  2. Prepare the chicken: Rub chicken breasts with olive oil, Italian seasoning, salt, and pepper. Place in the baking dish.

  3. Make the bruschetta topping: In a bowl, combine cherry tomatoes, garlic, balsamic vinegar, salt, pepper, and chopped basil.

  4. Spoon half of the tomato mixture over the chicken.

  5. Bake for 20–25 minutes, depending on thickness, or until internal temperature reaches 165°F (74°C).

  6. Top with cheese: Sprinkle mozzarella and Parmesan over each breast, then spoon the remaining tomato mixture on top.

  7. Return to the oven and bake for 5–7 more minutes until cheese is melted and bubbly.

  8. Garnish with extra basil before serving.

Notes

Serve this dish over pasta, rice, zucchini noodles, or enjoy it on its own for a low-carb option. For added crunch, top with toasted breadcrumbs or serve alongside garlic bread. This bake also works well with boneless chicken thighs and can be doubled for larger meals or leftovers.
