This one-pan Cajun Sausage and Rice Skillet is perfect for busy weeknights or when you’re craving something bold and comforting. Smoky Andouille sausage, Cajun spices, and tender rice come together in a hearty, flavorful meal that’s ready in under 40 minutes.

  • 1 tbsp olive oil

  • 1 lb Andouille sausage, sliced into rounds

  • 1 green bell pepper, chopped

  • 1 celery stalk, diced

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 1 cup long-grain white rice

  • 2 ¼ cups chicken broth

  • 1 tsp Cajun seasoning (adjust to taste)

  • Salt and black pepper to taste

  • Optional: chopped green onions for garnish

Instructions

  • Heat olive oil in a large skillet over medium heat.

  • Add sliced sausage and cook until browned on both sides, about 5 minutes. Remove sausage and set aside.

  • In the same skillet, sauté the onion, bell pepper, celery, and garlic until softened, about 5–6 minutes.

  • Stir in the rice and toast it for 1–2 minutes, allowing the grains to lightly brown.

  • Add the chicken broth, Cajun seasoning, salt, and pepper. Return the sausage to the skillet and stir to combine.

  • Bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes, or until the rice is tender and liquid is absorbed.

  • Fluff with a fork, garnish with green onions if desired, and serve hot.

Notes

  • For extra spice, add a pinch of cayenne or a splash of hot sauce.

  • Substitute brown rice, but increase the cooking time accordingly.
