This one-pan Cajun Sausage and Rice Skillet is perfect for busy weeknights or when you’re craving something bold and comforting. Smoky Andouille sausage, Cajun spices, and tender rice come together in a hearty, flavorful meal that’s ready in under 40 minutes.
1 tbsp olive oil
1 lb Andouille sausage, sliced into rounds
1 green bell pepper, chopped
1 celery stalk, diced
1 small onion, chopped
2 cloves garlic, minced
1 cup long-grain white rice
2 ¼ cups chicken broth
1 tsp Cajun seasoning (adjust to taste)
Salt and black pepper to taste
Optional: chopped green onions for garnish
Heat olive oil in a large skillet over medium heat.
Add sliced sausage and cook until browned on both sides, about 5 minutes. Remove sausage and set aside.
In the same skillet, sauté the onion, bell pepper, celery, and garlic until softened, about 5–6 minutes.
Stir in the rice and toast it for 1–2 minutes, allowing the grains to lightly brown.
Add the chicken broth, Cajun seasoning, salt, and pepper. Return the sausage to the skillet and stir to combine.
Bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes, or until the rice is tender and liquid is absorbed.
Fluff with a fork, garnish with green onions if desired, and serve hot.
For extra spice, add a pinch of cayenne or a splash of hot sauce.
Substitute brown rice, but increase the cooking time accordingly.
