Beef and potato casserole is a hearty, comforting dish that layers savory ground beef, tender potatoes, and a creamy, cheesy sauce into one satisfying bake. It’s the perfect family-friendly dinner for busy weeknights, potlucks, or cozy weekend meals. Simple to prepare and made with pantry staples, this casserole delivers big comfort with minimal effort.

  • 1 ½ lbs (680g) ground beef

  • 2 tablespoons olive oil

  • 1 medium onion, finely chopped

  • 3 garlic cloves, minced

  • 1 teaspoon paprika

  • 1 teaspoon dried thyme (or Italian seasoning)

  • Salt and black pepper, to taste

  • 2 tablespoons all-purpose flour

  • 1 cup beef broth

  • 1 cup milk (whole or 2%)

  • ½ cup sour cream

  • 2 lbs (900g) potatoes, thinly sliced

  • 2 cups shredded cheddar cheese (or mozzarella)

  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  • Cook the beef: In a large skillet, heat olive oil over medium-high heat. Add ground beef and onion, cooking until beef is browned and onion softened, about 6–7 minutes. Stir in garlic, paprika, thyme, salt, and pepper. Sprinkle flour over beef, stir, and cook for 1–2 minutes. Add beef broth and milk, stirring until thickened. Remove from heat and stir in sour cream.

  • Prepare the potatoes: Wash and peel potatoes. Slice thinly (about ⅛-inch thick) using a knife or mandoline.

  • Assemble the casserole: Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish. Layer half the potatoes in the bottom. Spread half the beef mixture on top, then sprinkle with 1 cup cheese. Repeat with remaining potatoes, beef, and cheese.

  • Bake: Cover with foil and bake for 40 minutes. Remove foil and bake an additional 20 minutes until potatoes are tender and top is golden and bubbly.

  • Serve: Garnish with parsley. Let rest for 10 minutes before slicing and serving.
